  • ½ cup extra-virgin olive oil
  • ½ cup slivered almonds
  • 1 large clove garlic (peeled and smashed)
  • 1 cup packed basil leaves
  • ½ cup grated Parmesan cheese
  • 1 teaspoon kosher salt

Instructions

  1. Preheat your oven to 400°F. Line a baking sheet with foil.
  2. Arrange cherry tomatoes in a single layer on the baking sheet and drizzle with 1 tablespoon of olive oil. Roast for about 20 minutes until soft and slightly caramelized.
  3. While tomatoes roast, toast slivered almonds in a skillet over medium-low heat for about 5 minutes until golden brown.
  4. In a food processor, add toasted almonds and smashed garlic; pulse until finely ground.
  5. Add cooled roasted tomatoes, basil leaves, Parmesan cheese, and salt; pulse to combine.
  6. Gradually drizzle in remaining olive oil while processing until smooth.
