- 1 medium chicken breast
- 2–3 slices fresh tomato (plus extra for the salad)
- 2 slices mozzarella or provolone cheese
- 1 tsp paprika
- 1 tbsp olive oil
- Salt & freshly cracked black pepper, to taste
- 1 cup cucumber slices
- 1 cup chopped lettuce
- 1 tsp lemon juice or light vinaigrette
- Cut a pocket into the side of the chicken breast using a knife.
- Stuff the pocket with tomato slices and cheese. Season the outside with paprika, salt, and pepper.
- Heat olive oil in a skillet over medium heat. Cook the stuffed chicken for 5-6 minutes on each side until golden brown and cooked through.
- In a mixing bowl, combine cucumber slices, chopped lettuce, and extra tomato slices. Drizzle with lemon juice or vinaigrette and toss gently.
- Serve your stuffed chicken alongside the fresh salad while warm.
