  • 1/4 cup brown sugar
  • 1/4 cup granulated sugar
  • 2 tablespoons corn syrup
  • 1 tablespoon water
  • 2 tablespoons butter
  • 1/2 teaspoon pure vanilla extract

Instructions

  1. Prepare your pan by lining a cookie sheet with parchment paper or a silpat.
  2. In a medium-small saucepan, combine walnuts, both sugars, corn syrup, and water. Stir gently until mixed, then add the butter.
  3. Attach a candy thermometer and cook over medium heat until the mixture reaches 295°F while stirring occasionally.
  4. Once at temperature, remove from heat and stir in vanilla extract. Quickly spread the mixture onto the lined baking sheet using two forks to separate any nuts.
