Ingredients

  • Crushed ladyfinger cookies – 1 cup (about 100g)
  • Cooled espresso – 1/2 cup (about 120ml)
  • Cocoa powder – 1/4 cup (for dusting)
  • Dark chocolate – 8 oz (about 225g), chopped
  • Sugar – 1/4 cup (about 50g)
  • Vanilla extract – 1 teaspoon

Instructions

  1. Brew espresso and allow it to cool to room temperature.
  2. In a mixing bowl, combine mascarpone cheese, crushed ladyfinger cookies, cooled espresso, sugar, and vanilla extract. Mix until well combined.
  3. Refrigerate the mixture for about an hour to firm up.
  4. Use a cookie scoop to form small balls from the chilled mixture and place on a parchment-lined baking sheet.
  5. Melt the dark chocolate using a double boiler or microwave.
  6. Dip each truffle into melted chocolate, letting excess drip off before returning them to the parchment paper.
  7. Chill the coated truffles for about 30 minutes until the chocolate sets.
