  • 6 boiled eggs
  • 2 tablespoons mayonnaise
  • 1 tablespoon Dijon mustard
  • 1 tablespoon fresh lemon juice
  • 1 tablespoon creme fraiche (or substitute with soft cream cheese)
  • 2 tablespoons smoked paprika
  • Fresh sage for garnish
  • Fresh thyme for garnish
  • Sea salt
  • Ground black pepper

Instructions

  1. Boil the eggs in water for 10-12 minutes until hard-boiled. Transfer to an ice bath to cool completely before peeling.
  2. Slice each egg in half lengthwise and gently remove the yolks.
  3. In a mixing bowl, combine the yolks with mayonnaise, Dijon mustard, lemon juice, creme fraiche, smoked paprika, sea salt, and black pepper. Mash until smooth.
  4. Fill each egg white half generously with the yolk mixture using a spoon or piping bag.
  5. Garnish each filled egg with fresh sage and thyme sprigs. Serve on a platter.
