  • 34 cherry tomatoes, halved
  • 1 cup broccoli florets
  • 1 cup cauliflower florets
  • 1 cup carrot slices

  • Salt & freshly cracked black pepper

Instructions

  1. In a non-stick skillet, heat olive oil over medium-low heat.
  2. Crack the egg into the skillet and cook until the whites are set but the yolk remains runny. Season with salt and pepper.
  3. Meanwhile, bring water to a boil in another pot and steam broccoli, cauliflower, and carrots for about 4–5 minutes until tender-crisp.
