  • 2 teaspoons baking powder
  • 1 teaspoon kosher salt

  • ½ cup butter (for caramel sauce)
  • 1 cup brown sugar (for caramel sauce)
  • ½ cup cream (35%) (for caramel sauce)
  • ½ teaspoon kosher salt (for caramel sauce)

Instructions

  1. Preheat your oven to 350°F and butter an 11 x 8-inch glass casserole dish.
  2. In a bowl, combine chopped dates and baking soda; scald milk and pour over the dates. Set aside for about 15 minutes.
  3. Mix flour, baking powder, and salt in another bowl. Beat eggs until fluffy in a separate bowl.
  4. In a food processor, blend eggs, dark brown sugar, butter, and vanilla until combined. Gradually add dry ingredients and then the date mixture until smooth.
  5. Pour batter into the prepared dish and bake for approximately 30 minutes until set.
  6. While baking, make the caramel sauce by melting butter in a saucepan, adding brown sugar and salt, then stirring in cream until thickened.
  7. Once baked, poke holes in the pudding and drizzle one-third of the sauce over it; allow to soak for about 15 minutes before serving topped with more sauce and whipped cream.
