  • ⅓ cup neutral oil (vegetable or canola)
  • 1 cup milk or water
  • 4 large eggs
  • ¼ cup unsalted butter (softened)
  • 1 cup powdered sugar
  • 1½ tbsp cocoa powder
  • ½ tsp vanilla extract
  • 12 oz dark cocoa candy melts
  • White nonpareils or sprinkles for decoration

Instructions

  1. Preheat your oven to 325°F (162°C). Grease or line a baking pan.
  2. In a large bowl, combine the cake mix, oil, milk/water, eggs, and softened butter. Mix until smooth.
  3. Pour the batter into the prepared pan and bake according to package instructions. Check for doneness with a toothpick.
  4. After baking, crumble the cooled cake into a large mixing bowl.
  5. Prepare the buttercream by mixing powdered sugar and cocoa powder with softened butter until smooth; fold this into the crumbled cake until combined.
  6. Roll the mixture into balls (about 1¼ inch in diameter) and chill in the freezer for 15 minutes.
  7. Melt some candy melts and dip each lollipop stick before inserting it halfway into each cake ball; chill again for another 15 minutes.
  8. Melt remaining candy melts until smooth; coat each cake pop thoroughly and let excess drip off.
  9. Quickly decorate with sprinkles before the coating sets and place upright in a styrofoam block to dry completely.
