  • 2 tablespoons Dijon mustard
  • 1 tablespoon hot sauce
  • 1 tablespoon lemon juice
  • 1 teaspoon Creole seasoning
  • 1 teaspoon chopped fresh parsley

Instructions

  1. In a large bowl, mix cornmeal, flour, baking powder, salt, black pepper, cayenne pepper, and smoked paprika until well combined.
  2. In another bowl, whisk together buttermilk, beaten egg, green onions, and parsley.
  3. Stir the wet ingredients into the dry mixture until just combined; fold in crawfish tails gently.
  4. Heat vegetable oil in a deep fryer or skillet to 350°F (175°C).
  5. Drop spoonfuls of batter into hot oil and fry for about 2-3 minutes until golden brown.
  6. Drain on paper towels before serving with the Creole dipping sauce.
