  • 1 cup beef broth
  • 1/2 cup coconut milk
  • 1 tbsp tomato paste
  • Salt and pepper to taste
  • 2 tbsp oil for searing
  • 2 cups all-purpose flour
  • 1/2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1/2 cup plain yogurt
  • 1/2 cup warm milk
  • 1 tbsp melted butter, for cooking
  • 3 cloves garlic, finely minced

Instructions

  1. Begin by chopping the onion, mincing garlic, grating ginger, and cutting the beef into cubes.
  2. Heat oil in your heavy-bottomed pot over medium-high heat. Once hot, add the beef cubes in batches to avoid overcrowding. Sear until browned on all sides (about 5 minutes). Remove from pot and set aside.
  3. In the same pot, add onions and sauté until translucent (about 5 minutes). Add minced garlic and grated ginger; cook for an additional minute until fragrant.
  4. Stir in curry powder, cumin, coriander, cayenne pepper (if using), cinnamon, and turmeric. Cook for about 30 seconds to release their flavors.
  5. Return seared beef to the pot along with crushed tomatoes, beef broth, coconut milk, tomato paste, salt, and pepper. Stir well to combine all ingredients.
  6. Cover the pot and reduce heat to low. Let it simmer gently for at least 3 hours or until the beef is tender. If using a slow cooker, transfer ingredients there and cook on low for 6-8 hours.
  7. While the curry is simmering, in a mixing bowl, combine flour, baking powder, baking soda, and salt. Mix in yogurt and warm milk until a dough forms; knead briefly.
  8. Divide dough into balls; roll out into flat discs. Heat a skillet over medium-high heat; brush one side with melted butter then place in skillet butter-side down. Sprinkle minced garlic on top; cook until golden brown.
