  • 1.5 tsp baking powder
  • 1.5 tsp baking soda
  • 1 cup granulated sugar
  • ⅔ cup light brown sugar
  • 1 tsp salt
  • 3 large eggs, ideally room temp
  • ⅔ cup vegetable oil
  • ⅓ cup buttermilk (mix ⅓ cup whole milk + 1 tsp vinegar)
  • 1 cup sour cream, ideally room temp
  • ¾ cup cocoa powder, Dutch Processed preferred
  • 2 tsp instant coffee
  • ¾ cup boiling water
  • 1 cup granulated sugar (for frosting)
  • 5 tbsp unsalted butter
  • ½ cup heavy cream, warmed up
  • ¾ tsp salt
  • 1 ½ tsp vanilla
  • 200g dark chocolate
  • 8 oz cream cheese, room temp
  • ⅓ cup cocoa powder
  • 1 cup powdered sugar
  • ½ cup salted caramel sauce
  • 1 cup heavy cream, cold

Instructions

  1. Preheat oven to 350°F (175°C) and grease two 9-inch round cake pans.
  2. In a large mixing bowl, combine the sifted all-purpose flour, baking powder, baking soda, granulated sugar, light brown sugar, cocoa powder, and salt. Whisk together until well combined.
  3. In another bowl, beat the eggs until frothy. Add in vegetable oil, buttermilk, sour cream, and instant coffee. Mix until smooth.
  4. Gradually add the wet mixture into the dry ingredients, stirring gently until just combined. Carefully pour in the boiling water while mixing to achieve a smooth batter.
  5. Divide the batter evenly between prepared pans and bake for about 30-35 minutes or until a toothpick inserted in the center comes out clean.
  6. While cakes cool, prepare the frosting by combining granulated sugar and butter in a saucepan over medium heat until melted. Stir in warm heavy cream and salt; boil for one minute then remove from heat. Let it cool slightly before adding vanilla and dark chocolate; stir until smooth.
  7. Once cooled, layer the cake by placing one layer on a serving plate. Spread half of the chocolate caramel fudge frosting on top. Drizzle with salted caramel sauce before placing the second layer on top. Frost the top and sides of the cake with remaining frosting.
