  • 2 cans (15 oz each) cannellini beans, drained and rinsed
  • 4 cups vegetable broth
  • 1 sprig fresh rosemary
  • 2 sprigs fresh thyme
  • 1 bay leaf
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 2 cups chopped spinach or kale
  • 1 tablespoon lemon juice

Instructions

  1. In a large pot, heat olive oil over medium heat. Sauté chopped onion, carrots, and celery for 8–10 minutes until soft.
  2. Add minced garlic and tomato paste; cook for 1–2 minutes until fragrant.
  3. Stir in cannellini beans, vegetable broth, rosemary, thyme, bay leaf, salt, and pepper; bring to a gentle boil.
  4. Reduce heat to simmer uncovered for 20–25 minutes.
  5. In the last few minutes of cooking, add spinach or kale until wilted.
  6. Remove the bay leaf and stir in lemon juice before serving.
