  • 1 whole chicken (45 lbs)
  • 2 tbs salt
  • 1 lb baby potatoes (halved)
  • 1 lb carrots (roughly chopped)
  • 1 large onion (quartered)
  • 4 tbs olive oil
  • 1 ½ sticks softened butter
  • 4 cloves minced garlic
  • Bayou City All Purpose Seasoning
  • Smoked paprika
  • Lemon zest
  • Fresh rosemary (chopped)
  • Fresh thyme
  • Fresh sage
  • ½ cup white apple vinegar or chicken stock

Instructions

  1. Preheat oven to 425°F (220°C).
  2. Season the chicken with 1 tablespoon of salt and set aside.
  3. In a bowl, mix softened butter with minced garlic, seasonings, lemon zest, and remaining salt and pepper.
  4. Rub the garlic butter all over the chicken under the skin and inside the cavity; stuff with herbs and half of the onion.
  5. Toss potatoes, carrots, remaining onion with olive oil and seasoning; place in a roasting pan with vinegar or stock.
  6. Place the chicken on a rack above vegetables and roast for about 1 hour and 30 minutes until it reaches an internal temperature of 165°F (75°C), basting every 30 minutes.
  7. Let rest for 10–15 minutes before carving.
