  1. In a mixing bowl, combine peanut butter and 1/3 cup powdered sugar. Microwave in 10-second intervals until melted and smooth.
  2. Crush the rice Chex into smaller pieces in a large bowl, leaving some larger chunks for texture.
  3. Pour the melted peanut butter mixture over the crushed cereal and stir until fully coated. Chill in the refrigerator for about 30 minutes.
  4. Melt the semi-sweet chocolate chips using a double boiler or microwave until smooth.
  5. Form the chilled cereal mixture into approximately 1½ tablespoon-sized balls (yielding about 18 truffles).
  6. Dip each ball into the melted chocolate until completely coated and place on a parchment-lined baking sheet.
  7. Refrigerate until chocolate hardens, then roll in powdered sugar before serving.
