  • 1/2 cup unsalted butter (melted)
  • 24 oz cream cheese (softened)
  • 3/4 cup granulated sugar
  • 3 large eggs
  • 1 cup canned pumpkin puree
  • 1 teaspoon vanilla extract
  • 1 tablespoon pumpkin pie spice

Instructions

  1. Preheat oven to 325°F (163°C).
  2. Combine graham cracker crumbs and sugar in a bowl. Add melted butter and mix well.
  3. Press mixture into the bottom of a greased 9×13 inch baking pan.
  4. In another bowl, beat softened cream cheese until smooth. Gradually add sugar; mix well.
  5. Add eggs one at a time, mixing thoroughly after each addition. Stir in pumpkin puree, vanilla extract, and pumpkin pie spice until smooth.
  6. Pour filling over crust and bake for about 40 minutes or until set around the edges but slightly wobbly in the center.
  7. Allow cooling at room temperature before refrigerating for at least 4 hours or overnight.
