  • 100g diced chicken breast
  • 2 soft-boiled eggs
  • 1 cup broccoli florets
  • 1 cup cherry tomatoes (halved)
  • 2 tbsp crumbled feta cheese
  • 1 tsp olive oil
  • Salt and freshly cracked black pepper to taste

Instructions

  1. Rinse quinoa under cold water and cook according to package instructions until fluffy.
  2. Season diced chicken with salt and pepper. Heat olive oil in a skillet over medium heat and cook chicken for about 5-6 minutes until golden brown.
  3. Boil eggs in a pot of water for 7 minutes for jammy yolks. Cool under cold water, peel, and halve.
  4. Steam broccoli in a steamer basket for about 3-4 minutes until tender yet crisp.
  5. Assemble your bowl by layering cooked quinoa at the bottom, followed by chicken pieces, egg halves, steamed broccoli florets, halved cherry tomatoes, and crumbled feta cheese.
