  • ½ cup packed light brown sugar
  • ½ cup unsalted butter (softened)
  • ½ cup creamy peanut butter
  • 1 large egg
  • 1 tsp vanilla extract
  • 1 tsp baking soda
  • ¼ tsp salt
  • 24 chocolate candies (unwrapped)

Instructions

  1. Preheat your oven to 375°F (190°C) and line baking sheets with parchment paper.
  2. In a large mixing bowl, cream together softened butter, granulated sugar, brown sugar, and peanut butter until light and fluffy. Add egg and vanilla extract; mix until well combined.
  3. In a separate bowl, whisk together flour, baking soda, and salt. Gradually add this dry mixture to the wet ingredients until just combined.
  4. Scoop out small portions of dough and roll them into 1-inch balls. Roll each ball in granulated sugar before placing on baking sheets about 2 inches apart.
  5. Bake for about 10-12 minutes or until edges are golden and puffy. Immediately press a chocolate candy into the center of each cookie after removing from the oven.
  6. Allow cookies to cool on the baking sheet for about 5 minutes before transferring them to a wire rack to cool completely.
