  • 1 cup asparagus spears, trimmed

  • 1 cup cherry tomatoes
  • 1 tsp olive oil
  • Pinch of salt & pepper
  • 2 eggs
  • 1 tbsp milk (optional, for creaminess)
  • 1 tsp butter
  • Salt & pepper to taste

Instructions

  1. Sauté cherry tomatoes in olive oil until softened; set aside.
  2. Season the salmon with salt and pepper. Pan-sear skin-side down for 4-5 minutes, then flip and cook for another 3-4 minutes.
  3. Sauté asparagus in olive oil until tender-crisp.
  4. Cook garlic in butter, add mushrooms, and sauté until browned.
  5. Whisk eggs with milk (optional), season, then scramble gently in melted butter over low heat.
