Ingredients

Scale
  • 12 Ginger Snap Cookies
  • 2 Tbsp Butter (melted)
  • 16 oz Full Fat Cream Cheese (room temp)
  • 1 Cup Sugar
  • 1 Tbsp Vanilla
  • 1/4 Tsp Cinnamon
  • 1/4 Tsp Nutmeg
  • 1/2 Cup Eggnog
  • 1 Cup Heavy Whipping Cream

Instructions

  1. Begin by crushing the gingersnap cookies into fine crumbs and mixing them with melted butter until well combined. Press this mixture firmly into the bottom of a 9-inch springform pan.
  2. In a separate bowl, beat the room temperature cream cheese and sugar with an electric mixer until smooth. Incorporate vanilla, cinnamon, nutmeg, and eggnog into the mixture.
  3. Whip the heavy cream in another bowl until stiff peaks form, then gently fold it into the cream cheese mixture until fully blended.
  4. Pour the cheesecake filling over the prepared crust and smooth it out using a rubber spatula. Cover and refrigerate for at least 90 minutes or until set.
  5. Carefully remove from the springform pan, slice into wedges, and serve chilled.
