  • 1 large onion
  • 2 medium carrots
  • 1 large stalk celery
  • 3 cloves garlic
  • 2 pounds mushrooms (1 pound white, 1 pound brown)
  • ½ cup tomato paste
  • 1 tablespoon balsamic vinegar
  • Fresh basil leaves for garnish

Instructions

  1. Coarsely chop the mushrooms and set aside. Chop the onion, carrots, and celery.
  2. Heat olive oil in a large skillet; sauté chopped vegetables for about 5 minutes.
  3. Add garlic, rosemary, bay leaves, and tomato paste; cook for another 3 minutes.
  4. Stir in chopped mushrooms; season with salt and pepper. Cook until water evaporates (about 20 minutes).
  5. Mix in balsamic vinegar; taste and adjust seasoning as needed.
  6. Serve over cooked pasta or polenta, garnished with fresh basil.
