  • 5 pounds russet or Yukon Gold potatoes
  • 12 tablespoons unsalted butter
  • 1 ½ cups heavy cream
  • 12 ounces manchego cheese (freshly grated)
  • Kosher salt
  • Freshly ground black pepper
  • Fresh chopped chives (for garnish)

Instructions

  1. Wash, peel, and chop the potatoes; soak them in cold water for up to 18 hours if prepping in advance.
  2. In a large pot, cover the potatoes with cold water, season lightly with salt, and bring to a boil; cook until fork-tender (about 12-15 minutes).
  3. While boiling, heat butter and cream in a saucepan until warmed through.
  4. Drain cooked potatoes and return them to the pot; mash using a potato masher or ricer.
  5. Mix in half of the warmed butter and cream with salt; use a hand mixer on low speed until smooth.
  6. Stir in the remaining butter and cream mixture along with grated manchego cheese; blend until fully combined.
