  • 1 lb ground beef
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 cup breadcrumbs
  • 1 large egg
  • ¼ cup milk
  • 4 large russet potatoes
  • 3 tbsp butter
  • ½ cup sour cream
  • 1 cup shredded cheddar cheese

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a mixing bowl, combine ground beef, onion, garlic, breadcrumbs, egg, milk, Worcestershire sauce, ketchup, oregano, basil, salt, and pepper.
  3. Shape the mixture into a loaf and place it on a baking sheet or in a loaf pan. Bake for 40-45 minutes until the internal temperature reaches 160°F (71°C). Let rest for 10 minutes before slicing.
  4. While the meatloaf bakes, scrub and pierce potatoes with a fork; bake for about 45 minutes or microwave for 8-10 minutes until tender. Cut in half and scoop out the insides into another bowl.
  5. Mash potato insides with butter, sour cream, salt, and pepper; mix in cheddar cheese and green onions. Stuff back into potato skins and top with extra cheese.
  6. Bake stuffed potatoes for an additional 5-10 minutes until cheese is melted.
