  • 2 cups vegetable oil
  • 4 tablespoons freshly squeezed lemon juice
  • 4 tablespoons ice water

  2. With the processor running, slowly drizzle in vegetable oil to emulsify the mixture.
  3. Once half of the oil is incorporated, alternate adding lemon juice and the remaining oil gradually while blending for about 20 minutes until creamy.
  4. Blend in ice water to achieve a smooth texture.
  5. Transfer to a bowl and optionally garnish with olive oil and fresh parsley.
  6. Refrigerate overnight for enhanced flavor before serving.
