  • 2 tbsp brown sugar
  • 1 and 1/2 cups warm water
  • 4 and 1/2 cups flour
  • 1/4 cup olive oil
  • 2 tsp salt
  • 6 cups water (for boiling)
  • 2 tbsp baking soda
  • 1 egg (for egg wash)
  • Coarse salt or everything but the bagel seasoning (for topping)

Instructions

  1. Prepare the yeast mixture by combining warm water, yeast, and brown sugar in a bowl. Let it sit for about 5–10 minutes until foamy.
  2. Mix in flour, olive oil, and salt. Knead the dough for about five minutes until it springs back when pressed.
  3. Let the dough rise in a warm place for around an hour until doubled in size.
  4. Shape the dough into pretzels by rolling pieces into ropes and twisting them into shape.
  5. Boil water mixed with baking soda; dip each pretzel for 15–30 seconds before placing them on a parchment-lined baking sheet.
  6. Brush with egg wash and sprinkle with toppings before baking at 450°F (232°C) for about 10–11 minutes until golden brown.
  7. Serve warm with your favorite dips.
