  • 1 leg quarter (bone-in, skin-on) chicken
  • 1 tsp olive oil
  • 1 tsp dried thyme or Italian seasoning
  • Salt & pepper, to taste
  • 1 clove garlic, minced
  • 1 cup green beans, trimmed
  • 1 tsp olive oil or butter
  • 1 garlic clove, minced
  • 1 cup baby carrots
  • 1 tsp olive oil
  • 1 tsp honey or maple syrup
  • Pinch of salt & black pepper

Instructions

  1. Preheat oven to 400°F (200°C). Rub chicken with olive oil, herb seasoning, minced garlic, salt, and pepper.
  2. Roast chicken in the oven for 35-40 minutes until golden brown and juices run clear.
  3. Toss baby carrots with olive oil, honey (or maple syrup), salt, and pepper. Roast them on a baking sheet for 25-30 minutes until tender.
  4. In a skillet over medium heat, sauté green beans with olive oil and minced garlic for 6-8 minutes until bright green.
  5. Serve chicken alongside glazed carrots and sautéed green beans.
