  • 1 tsp olive oil
  • 1 tsp garlic powder
  • 1 tsp paprika
  • 1 cup cooked rice (brown or white)
  • 1 cup corn kernels
  • 1 cup green beans, chopped
  • 1 cup broccoli florets
  • 1 cup cauliflower florets
  • Salt & pepper, to taste

Instructions

  1. Preheat the oven to 400°F (200°C). Toss broccoli and cauliflower with olive oil, salt, pepper, and garlic powder in a mixing bowl. Spread on a baking sheet and roast for 20-25 minutes.
  2. Season sliced chicken breast with olive oil, garlic powder, paprika, salt, and pepper. Grill or pan-sear over medium heat for about 5-6 minutes per side until fully cooked.
  3. In a separate pan, sauté corn and chopped green beans with olive oil or soy sauce until heated through. Mix in the cooked rice until well combined.
  4. Serve by arranging grilled chicken alongside veggie rice and roasted vegetables.
