  • 4 lamb shanks (about 1600g total)
  • 1/4 cup olive oil
  • 1 1/2 cup pearl onions, peeled
  • 2 celery sticks, diced
  • 4 garlic cloves, minced
  • 1 cup red apple vinegar
  • 1 tsp dried oregano
  • 1 tsp paprika
  • 2 tsp garlic powder
  • 1/2 tsp ground all spice
  • 2 cinnamon sticks or 1/2 tsp ground cinnamon
  • 1 tsp kosher salt
  • 1/2 tsp pepper
  • 2 bay leaves
  • 4 cups chicken broth
  • 28 oz jar or can of tomato sauce
  • Fresh parsley for garnish
  • 2 lbs Yukon gold potatoes, peeled and chopped into 1 inch pieces
  • 1/2 cup unsalted butter
  • 11 1/2 tsp salt
  • 1/4 tsp ground pepper
  • 1/4 cup whole milk
  • 1/4 cup plain cream cheese

Instructions

  1. Prepare your ingredients by chopping the vegetables and measuring out spices.
  2. In a heavy-bottomed pot, heat olive oil over medium-high heat. Season lamb shanks with salt and pepper and sear on all sides until browned (about 8 minutes). Remove from pot.
  3. Sauté pearl onions, celery, and minced garlic in the same pot until softened (about 5 minutes).
  4. Combine red apple vinegar, dried oregano, paprika, garlic powder, allspice, ground cinnamon (if using), kosher salt, pepper, bay leaves, chicken broth, and tomato sauce in the pot with sautéed vegetables.
  5. Return lamb shanks to the pot and cover with a lid. Reduce heat to low and simmer gently for about 150 minutes or until fork-tender.
  6. For creamy mashed potatoes: Boil Yukon gold potatoes until tender (about 15 minutes). Drain and mash with butter, milk, cream cheese, salt, and pepper until smooth.
  7. Serve lamb shanks alongside mashed potatoes garnished with fresh parsley.
