  • 3 medium potatoes
  • 1012 medium shrimp
  • 1 cup broccoli florets
  • 1 red bell pepper
  • 1 yellow bell pepper
  • 1 green bell pepper
  • 4 tablespoons butter (divided)
  • 2 teaspoons olive oil (divided)
  • 2 cloves garlic
  • Salt and black pepper
  • 1 cup milk

Instructions

  1. Boil peeled and cubed potatoes in salted water for 12-15 minutes until fork-tender. Drain and mash with butter, milk, salt, and pepper until creamy.
  2. In a skillet, heat 1 teaspoon olive oil over medium heat. Add broccoli and diced peppers; season with salt and pepper. Sauté for about 4-5 minutes until tender.
  3. In a separate skillet, melt remaining butter with olive oil over medium heat. Add minced garlic; sauté for 30 seconds. Add shrimp along with paprika, salt, and pepper; cook for about 2-3 minutes per side until pink and slightly golden.
  4. Serve mashed potatoes on one side of the plate, topped with shrimp and sautéed veggies.
