  • ½ cup whole milk buttermilk
  • 1 tsp orange zest
  • ½ cup fresh cranberries (chopped)
  • ⅓ cup pecan halves (chopped)

Instructions

  1. Preheat the oven to 350°F and line a muffin tin with paper liners.
  2. In an electric mixer, cream together softened butter and brown sugar until smooth.
  3. Add in the egg and vanilla extract; mix until fully combined.
  4. In a separate bowl, whisk together flour, baking powder, ground ginger, baking soda, and salt.
  5. Gradually mix the dry ingredients into the wet mixture, alternating with buttermilk until just combined.
  6. Gently fold in orange zest, chopped cranberries, and pecans without overmixing.
  7. Fill muffin liners about two-thirds full with batter and sprinkle remaining cranberries and pecans on top.
