  • 4 large Yukon Gold potatoes
  • 1 cup shredded Gruyère cheese
  • ½ cup Parmesan cheese
  • 1 cup heavy cream or whole milk
  • ½ cup beef broth or vegetable broth
  • 2 tablespoons butter
  • 1 tablespoon olive oil
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 teaspoon sugar (optional)
  • ½ teaspoon garlic powder
  • ½ teaspoon dried thyme (or 1 teaspoon fresh thyme)
  • 1 tablespoon butter (for greasing)
  • Fresh thyme sprigs for garnish
  • Extra Parmesan cheese for garnish
  • Crispy fried onions (optional, for extra crunch)

Instructions

  1. In a cast iron skillet over medium heat, melt butter and olive oil. Add sliced onions with salt, pepper, sugar (if using), garlic powder, and thyme. Cook for 25-30 minutes until golden brown.
  2. Preheat your oven to 375°F (190°C) and grease a baking dish with butter.
  3. Layer half of the sliced potatoes in the dish, followed by half of the caramelized onions and half of both cheeses. Repeat the layers.
  4. Whisk together heavy cream (or milk), salt, black pepper, and fresh thyme leaves; pour over layered ingredients.
  5. Cover with foil and bake for 45 minutes; remove foil and bake for another 15-20 minutes until bubbly and golden brown.
  6. Let cool slightly before serving with fresh thyme sprigs.
