  • 1 ⅓ cups regular unsweetened cocoa powder
  • 1 cup all-purpose flour
  • 1 teaspoon baking powder
  • ½ teaspoon kosher salt
  • 1 teaspoon espresso powder
  • 1 cup unsalted butter, (room temperature)
  • 2 cups granulated sugar
  • 1 cup semi-sweet chocolate chips
  • 1 tablespoon vanilla extract
  • 4 large eggs, (room temperature)
  • ¾ cup creamy peanut butter
  • 1 cup vegan marshmallow fluff

Instructions

  1. Preheat your oven to 350°F and line a 9×13-inch baking dish with parchment paper.
  2. In a large bowl, whisk together cocoa powder, flour, baking powder, salt, and espresso powder; set aside.
  3. In a saucepan over medium heat, melt the butter with sugar until it reaches a low boil (about 230°F). Remove from heat and stir in chocolate chips and vanilla until melted. Let cool for 10 minutes.
  4. Whisk in eggs one by one into the cooled mixture until smooth, then gently fold in dry ingredients until just combined.
  5. Spread half of the brownie batter in the prepared dish. Top with layers of peanut butter and vegan marshmallow fluff, then dollop remaining brownie batter on top.
  6. Bake for 30 to 35 minutes or until a toothpick comes out mostly clean. Allow cooling before cutting into squares.
