  • 175 g dried apricots, chopped
  • 3 tablespoons apple juice (plus extra for brushing)
  • 175 g butter, softened
  • 175 g light brown sugar
  • 4 large eggs, beaten
  • 175 g plain flour
  • 225 g raisins
  • 225 g currants
  • 225 g cherries, halved
  • 1 tablespoon apricot jam, warmed
  • 500 g marzipan
  • 500 g ready-to-roll fondant
  • 30 ml apple juice

Instructions

  1. Preheat your oven to 160°C (320°F) and line a 9×13 inch baking tray with parchment paper.
  2. Soak chopped dried apricots in 3 tablespoons of apple juice while preparing the batter.
  3. In a mixing bowl, cream together softened butter and light brown sugar until fluffy.
  4. Gradually incorporate beaten eggs, mixing well after each addition.
  5. Sift plain flour into the mixture and fold gently until just combined.
  6. Add soaked apricots, raisins, currants, and cherries; stir gently to distribute evenly.
  7. Pour batter into the prepared tray and bake for about 1 hour or until a toothpick comes out clean.
  8. Allow cooling completely before brushing with warm apricot jam and decorating with marzipan followed by fondant.
