  • 1/3 cup brewed espresso
  • 3 large eggs
  • 1/2 cup heavy cream
  • 1 cup semi-sweet chocolate chips

Instructions

  1. Preheat oven to 350°F (175°C).
  2. Combine Oreo crumbs with melted butter and press into a springform pan. Bake for 10 minutes and let cool.
  3. Beat cream cheese until smooth; add sugar, vanilla, espresso, and eggs—mix gently to combine.
  4. Pour filling over cooled crust and bake in a water bath at 325°F (160°C) for 65–85 minutes until set around edges.
  5. Cool gradually in the oven. For ganache, pour hot cream over chocolate chips; stir until smooth and spread over cheesecake once cooled.
  6. Refrigerate for at least four hours before serving.
