  • Zest from 1 lemon
  • 1 cup granulated sugar (for filling)
  • 2 large egg whites (for meringue)
  • 1/3 cup granulated sugar (for meringue)
  • 1/2 cup unsalted butter (for meringue)

Instructions

  1. Preheat your oven to 300°F (150°C) and line baking sheets with parchment paper.
  2. In a stand mixer, whisk egg whites and cream of tartar until frothy. Gradually add granulated sugar and whisk until stiff peaks form.
  3. Sift powdered sugar and almond flour together, then gently fold into the meringue mixture.
