  • 6 medium carrots (peeled)
  • 2 tablespoons extra virgin olive oil
  • ½ teaspoon kosher salt
  • 2 teaspoons garlic (minced)
  • ½ teaspoon onion powder
  • ½ teaspoon red pepper flakes
  • 1 teaspoon fresh rosemary (chopped)
  • 2 cups parmesan cheese (grated, divided)
  • Chopped parsley (for garnish)

Instructions

  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Cut the peeled carrots into 2-inch sections and then halve each section lengthwise for even cooking.
  3. In a large mixing bowl, combine olive oil, kosher salt, minced garlic, onion powder, red pepper flakes, and fresh rosemary. Mix well and toss in the carrots until coated.
  4. Sprinkle 1½ cups of grated parmesan cheese onto the prepared baking sheet as a base for the carrots.
  5. Place the carrot pieces cut side down on top of the cheese in a single layer without overcrowding.
  6. Top with the remaining grated parmesan cheese for added flavor.
  7. Bake in the preheated oven for 30–35 minutes or until tender and golden brown.
  8. Remove from the oven, garnish with chopped parsley, and serve warm.
