  • 1 tablespoon butter
  • 1.2 kg Hokkaido pumpkin
  • 1 kg starchy potatoes
  • 1 clove garlic
  • 200 ml milk
  • 200 ml cream
  • 1 teaspoon dried rosemary
  • Nutmeg (freshly grated)
  • 200 g grated cheese
  • Salt and pepper

Instructions

  1. Preheat your oven to 200°C (390°F) and grease a large baking dish with butter.
  2. Wash the pumpkin, halve it, remove the seeds, and slice thinly. Peel the potatoes and slice them thinly as well. Layer both in the baking dish and lightly season with salt.
  3. Finely chop the garlic. In a mixing bowl, combine milk, cream, garlic, rosemary, nutmeg, 50 g cheese, salt, and pepper; mix well.
  4. Pour the creamy mixture over the layered vegetables and top with remaining cheese.
  5. Bake for 40–45 minutes until the vegetables are tender and the cheese is golden brown.
  6. Serve hot and enjoy!
