2 cups butternut squash, peeled, seeded, and cubed
1 tablespoon olive oil (for roasting squash)
½ lb ground turkey or chicken sausage
4 garlic cloves, minced
6 oz fresh spinach
1 cup heavy cream
⅓ cup Parmesan cheese, shredded
8 oz farfalle pasta
Instructions
Preheat the oven to 400°F (200°C). Toss butternut squash with olive oil, salt, and pepper on a baking sheet. Roast for 25-30 minutes until caramelized.
Cook farfalle in salted boiling water according to package instructions; drain and set aside.
In a skillet over medium heat, sauté ground sausage in olive oil until browned. Add garlic and cook for another minute.
Stir in roasted butternut squash and fresh spinach until wilted. Pour in heavy cream and add Parmesan cheese; mix well.
Toss cooked farfalle into the skillet until coated with sauce.
