  • 1 lb rotini pasta
  • 10 cloves garlic (4 for chicken, 6 for sauce)
  • 10 tbsp unsalted butter (4 for chicken, 6 for sauce)
  • 4 cups heavy cream
  • 1 cup grated Parmesan cheese
  • 1/2 cup chicken broth
  • 1 tbsp Cajun seasoning
  • 1 tsp smoked paprika
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 2 tbsp olive oil

Instructions

  1. In a medium bowl, season cubed chicken with Cajun seasoning, smoked paprika, salt, and black pepper.
  2. Heat olive oil in a large skillet over medium-high heat. Cook seasoned chicken until golden brown (6-8 minutes) and set aside.
  3. In the same skillet, melt butter and sauté minced garlic until fragrant (about 1 minute).
  4. Boil water in a large pot; cook rotini according to package instructions until al dente. Drain while reserving some pasta water.
  5. In a large pot or Dutch oven, melt remaining butter and sauté garlic until fragrant. Add heavy cream and chicken broth; bring to simmer.
  6. Stir in Parmesan cheese, salt, black pepper, garlic powder, and onion powder; simmer until slightly thickened (5-7 minutes).
  7. Toss cooked rotini in the sauce until well coated; add reserved pasta water as needed. Gently mix in the garlic butter chicken.
