  • pinch of red pepper flakes (optional)
  • 3 garlic cloves (minced)
  • 1 cup pumpkin puree
  • 1 1/2 cups heavy whipping cream
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon ground sage
  • 1/8 teaspoon ground nutmeg
  • 1 teaspoon brown sugar
  • 1/2 cup parmesan cheese (freshly grated plus extra for serving)

Instructions

  1. Cook the rigatoni according to package directions until al dente. Drain and set aside.
  2. In a skillet, melt butter over medium heat. Sauté diced onion and optional red pepper flakes for 5-7 minutes until soft. Add minced garlic and cook for another minute.
  3. Stir in pumpkin puree and sauté briefly before adding heavy cream. Whisk until smooth, then mix in salt, black pepper, sage, nutmeg, and brown sugar.
