  • 2 large chicken breasts
  • 2 tbsp olive oil
  • 1 tsp paprika
  • 1 tsp garlic powder
  • Salt & pepper to taste
  • 1 tsp dried oregano
  • Juice of lemon
  • 300g penne pasta
  • 1 tbsp butter
  • 3 cloves garlic, minced
  • 200ml heavy cream
  • 50g grated Parmesan
  • 2 tbsp chopped parsley
  • 500g baby potatoes, halved
  • 1 tsp Italian seasoning
  • Fresh parsley for garnish

Instructions

  1. Marinate chicken in olive oil, lemon juice, paprika, garlic powder, oregano, salt, and pepper for 15 minutes.
  2. Preheat oven to 200C (400F) and roast halved baby potatoes tossed in olive oil and seasonings for 25-30 minutes.
  3. Cook penne pasta according to package instructions; drain.
  4. In a frying pan, melt butter and sauté minced garlic until fragrant. Add heavy cream and Parmesan cheese until creamy.
  5. Grill marinated chicken on medium-high heat for about 5-6 minutes on each side or until cooked through. Slice into strips.
  6. Combine cooked pasta with sauce and parsley; serve with sliced chicken and roasted potatoes.
