  • 1 lb boneless, skinless chicken breasts
  • 12 oz rigatoni pasta
  • 2 tbsp olive oil
  • 3 tbsp unsalted butter
  • 4 cloves garlic
  • 1 tsp Cajun seasoning
  • 1 cup heavy cream
  • 1 cup shredded mozzarella cheese
  • ½ cup grated Parmesan cheese
  • Fresh chopped parsley for garnish

Instructions

  1. Cook rigatoni in salted boiling water until al dente (10-11 minutes). Drain, reserving ½ cup of pasta water.
  2. Season chicken with Cajun seasoning, salt, and pepper. In a skillet, heat olive oil and 1 tbsp butter over medium-high heat. Sear chicken for 7-8 minutes until golden brown; add half the garlic during the last minute.
  3. Remove chicken from skillet. In the same pan, melt remaining butter and sauté the rest of the garlic. Pour in heavy cream, simmering for 2-3 minutes until thickened.
  4. Stir in mozzarella and Parmesan until smooth; season with Italian seasoning and crushed red pepper flakes.
  5. Add cooked rigatoni to the sauce, mixing well. If needed, add reserved pasta water to reach desired consistency.
  6. Serve rigatoni topped with chicken and garnish with parsley.
