  • 9 oz cheese tortellini (fresh or refrigerated)
  • 1 cup heavy cream
  • 4 oz Velveeta cheese, cubed
  • 1 cup shredded mozzarella cheese
  • 1 cup grated Parmesan cheese
  • 1/2 cup reserved pasta water (if needed)
  • Fresh parsley for garnish (optional)

Instructions

  1. Cook the tortellini in a large pot of salted boiling water according to package instructions. Reserve ½ cup of pasta water, then drain the tortellini and set aside.
  2. Season both sides of the chicken with Cajun seasoning, Italian seasoning, salt, and pepper.
  3. Heat olive oil in a large skillet over medium-high heat. Add the chicken pieces in a single layer. Sear for about 4-5 minutes per side until golden brown and cooked through. Transfer cooked chicken to a plate and cover loosely with foil.
  4. In the same skillet, reduce heat to medium. Add butter and minced garlic; sauté for about 30 seconds until fragrant. Pour in heavy cream and stir in Velveeta cubes until fully melted. Add mozzarella and Parmesan cheese, stirring until smooth.
  5. Add cooked tortellini to the skillet with sauce; toss gently to coat. If sauce is too thick, add reserved pasta water gradually until desired consistency is reached.
  6. Return cooked chicken to skillet, nestling it beside tortellini. Simmer everything together for about 12 minutes until warmed through.
