  • 2 salmon fillets (about 150g each)
  • 1 cup canned coconut milk
  • Zest and juice of 1 lime
  • 1 tbsp olive oil
  • 1 garlic clove, minced
  • Salt, pepper, paprika, and curry powder (or turmeric) to taste
  • 1 cup cooked jasmine rice
  • Fresh cilantro for garnish

Instructions

  1. Season the salmon fillets with salt, pepper, and paprika. Heat olive oil in a skillet over medium-high heat.
  2. Sear the salmon for about 3-4 minutes per side until golden brown and cooked through. Remove from skillet.
  3. In the same skillet, sauté minced garlic briefly. Add coconut milk, lime zest, lime juice, curry powder (or turmeric), and honey (or maple syrup). Simmer for 2-3 minutes until slightly thickened.
  4. Return the salmon to the skillet, spooning sauce over it. Let simmer for another minute before removing from heat.
  5. Serve in bowls with jasmine rice topped with salmon, sauce, halved cherry tomatoes, lime wedges, and extra cilantro.
