  • 1/2 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 2 teaspoons vanilla extract
  • 2 large eggs
  • 1/2 cup milk
  • 1/2 cup light brown sugar, packed
  • 11/2 teaspoons ground cinnamon
  • 1 large apple, peeled, cored, and chopped into small pieces
  • 2 tablespoons brown sugar
  • 1/4 teaspoon ground cinnamon for topping
  • 3/4 cups confectioners’ sugar for glaze
  • 2 tablespoons water for glaze

Instructions

  1. Preheat oven to 350°F and grease an 8.5 x 4.5 inch loaf pan.
  2. In a bowl, whisk together flour, baking powder, and salt; set aside.
  3. Cream butter and granulated sugar with a mixer until smooth; add eggs one at a time.
  4. Gradually add the dry ingredients alternating with milk until just combined.
  5. In another bowl, mix chopped apple with brown sugar and cinnamon for filling.
  6. Layer half of the batter into the pan, top with half of the apple mixture, swirl gently.
  7. Repeat with remaining batter and apple mixture; sprinkle with topping.
  8. Bake for 45 to 55 minutes or until a toothpick comes out clean.
  9. Cool in the pan before drizzling with glaze made from confectioners’ sugar, water, and cinnamon.
