  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon chili powder
  • salt and pepper to taste
  • 2 tablespoons olive oil
  • 2 tablespoons freshly squeezed lime juice
  • 1/2 bunch fresh cilantro, chopped
  • 4 ripe peaches, cored and diced
  • 1 sweet red bell pepper, diced
  • 1/4 cup red onion, diced
  • 3 green onions, diced
  • 2 tablespoons freshly squeezed lime juice
  • 1/4 teaspoon chili powder
  • 1/3 cup Greek yogurt
  • 1/4 cup mayonnaise
  • 2 tablespoons Dijon mustard
  • 1 tablespoon Sriracha
  • 1 medium lime, freshly squeezed
  • 8 corn or flour tortillas

Instructions

  1. In a mixing bowl, combine chicken with smoked paprika, chili powder, salt, pepper, olive oil, lime juice, and chopped cilantro.
  2. Heat a skillet over medium-high heat and cook the seasoned chicken for about 5 minutes on each side until fully cooked. Let it rest before slicing.
  3. In another bowl, mix diced peaches, red bell pepper, red onion, green onions, cilantro, lime juice, chili powder, salt, and pepper to make the salsa.
  4. For the crema, whisk Greek yogurt, mayonnaise, Dijon mustard, Sriracha, lime juice, and cilantro until smooth.
  5. Warm tortillas in a dry skillet for about 1 minute on each side.
  6. Assemble tacos by placing sliced chicken on tortillas and topping with peach salsa and crema.
