  • 1 cup sliced zucchini, patted dry
  • 1 cup shredded sharp cheddar cheese
  • 1/2 cup mozzarella cheese
  • 1/4 cup grated Parmesan cheese
  • 2 tablespoons butter
  • 2 tablespoons flour
  • 1 1/2 cups milk
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon mustard powder
  • Salt and pepper to taste
  • 1/2 cup breadcrumbs mixed with 1 tablespoon melted butter

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Lightly steam or blanch the broccoli, cauliflower, and carrots until just tender, then pat dry.
  3. In a saucepan over medium heat, melt butter and whisk in flour to create a roux. Gradually add milk while whisking until thickened. Stir in cheddar, mozzarella, garlic powder, salt, and pepper until creamy.
  4. In a greased 9×13-inch baking dish, layer the vegetables evenly and pour the cheese sauce over them. Gently fold to coat.
  5. Top with grated Parmesan and buttered breadcrumbs.
  6. Bake uncovered for 25–30 minutes until golden brown and bubbly.
