  • 2 tbsp olive oil
  • 2 tbsp unsalted butter
  • 1 tsp Cajun seasoning
  • 1 tsp garlic powder
  • Salt and freshly ground black pepper, to taste
  • 4 cloves garlic, finely minced
  • 2 tbsp reserved pasta water, optional
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Boil rotini in salted water until al dente (8-10 minutes). Reserve 2 tablespoons of pasta water before draining.
  2. Season chicken strips with Cajun seasoning, garlic powder, salt, and pepper.
  3. Sear chicken in olive oil and butter over medium-high heat until golden (about 8-9 minutes total). Keep warm.
  4. In the same skillet, sauté minced garlic in remaining butter for 30 seconds.
  5. Pour in heavy cream and milk; add Velveeta cheese and stir until melted.
  6. Mix in mozzarella and Parmesan until creamy. Add reserved pasta water if needed.
  7. Toss cooked rotini into the sauce until well coated.
