  • 2 lamb shanks
  • 2 tablespoons olive oil
  • 1 onion, chopped
  • 2 carrots, chopped
  • 2 celery stalks, chopped
  • 4 garlic cloves, minced
  • 1 tablespoon tomato paste
  • 1 cup apple vinegar
  • 2 cups beef or lamb stock
  • 2 sprigs rosemary
  • Salt and freshly ground black pepper

Instructions

  1. Season the lamb shanks with salt and black pepper. In a Dutch oven, heat olive oil over medium-high heat and sear each shank until browned on all sides. Remove from pot and set aside.
  2. In the same pot, sauté the chopped onion, carrots, celery, and minced garlic until softened to build flavor.
  3. Stir in tomato paste, followed by apple vinegar and beef or lamb stock. Scrape up any browned bits from the pot as you mix.
  4. Return the seared lamb shanks to the pot with rosemary sprigs. Bring to a simmer, cover, reduce heat to low, and braise for about 2 to 3 hours until tender.
  5. Meanwhile, prepare the roasted garlic puree by blending roasted garlic cloves with olive oil until smooth.
