  • 1 tbsp lemon juice
  • 1 tsp cornstarch mixed with 1 tbsp water
  • 1 tsp dried culinary lavender (ground finely)
  • 1 tbsp unsalted butter
  • Fresh blueberries
  • Edible lavender flowers
  • Chocolate shavings

Instructions

  1. Preheat your oven to 350°F (175°C) and prepare three 9-inch cake pans with grease and parchment paper.
  2. In a bowl, whisk together flour, cocoa powder, baking powder, baking soda, and salt.
  3. In another bowl, mix sugar and oil; add eggs one by one, then stir in vanilla.
  4. Infuse buttermilk with ground lavender for 5 minutes before combining with wet ingredients.
  5. Gradually mix dry ingredients into the wet mixture, alternating with buttermilk and cooled coffee until smooth.
  6. Bake for 30-35 minutes until a toothpick comes out clean; cool completely on wire racks.
  7. For the blueberry compote, heat blueberries with sugar and lemon juice until soft; thicken with cornstarch mixture.
  8. Prepare the lavender ganache by steeping heavy cream with dried lavender before mixing with chocolate chips.
