  • 1 salmon fillet (56 oz)
  • 1 tsp blackened seasoning
  • 56 medium shrimp, peeled and deveined
  • 2 cups chopped romaine lettuce
  • 1/4 cucumber, sliced
  • 1/4 cup diced tomatoes
  • 2 tbsp chopped white onion or pico de gallo
  • 12 tbsp creamy dressing (ranch, chipotle, or Caesar)
  • Optional: lime or lemon juice for garnish

Instructions

  1. Season the salmon fillet with blackened seasoning.
  2. Heat olive oil in a non-stick skillet over medium-high heat and sear the salmon for about 4-5 minutes on each side until crispy outside and flaky inside.
  3. In the same skillet, sauté the shrimp for about 2-3 minutes on each side until they turn pink and lightly charred.
  4. On a plate or in a mixing bowl, layer chopped romaine lettuce, followed by cucumber slices, diced tomatoes, and chopped onions.
  5. Place the cooked salmon on top of the salad along with the sautéed shrimp.
  6. Drizzle with your choice of creamy dressing and finish with a squeeze of lime or lemon if desired.
  7. Serve immediately to enjoy while hot over chilled greens.
